Fresh, fast, and fun to eat...these lettuce wraps check off every single box. Our signature heirloom chicken is the star, grilled until perfectly tender and juicy. Then, we pair it with a bounty of fresh produce—including tomatoes, bell peppers, and cucumbers—and simple Honey-Dijon vinaigrette. All the ingredients are combined into a vibrant salad and nestled into crisp, crunchy lettuce cups. The perfect finishing touch? Creamy feta cheese.


Ingredients

  • 1 package Citarella Heirloom Boneless, Skinless Chicken Breasts
  • Salt and pepper, to taste
  • 2 Tbsp. Dijon mustard
  • ½ cup red wine vinegar
  • 2 Tbsp. honey
  • ¾ cup + 3 Tbsp. extra-virgin olive oil
  • 1 cup of mixed bell peppers, diced ½-inch
  • ½ medium red onion, finely diced
  • ¾ cup pitted olives, lightly chopped
  • 1 Tbsp. chopped Italian parsley
  • 3 Persian cucumbers, diced ½-inch
  • 1 cup grape tomatoes, washed and cut in half
  • 1 can chickpeas, rinsed
  • 1 cup of crumbled feta cheese
  • 3-12 leaves of lettuce (romaine, Boston, or red leaf), washed and dried

Instructions

  1. Preheat grill on medium-high heat.
  2. Dry the chicken breasts with a paper towel and season with salt and pepper. Grill 3-4 minutes on each side until thoroughly cooked. Remove from the grill, cool, and cut into ½-inch dice.
  3. Place the Dijon, red wine vinegar, and honey in a medium-sized mixing bowl. Whisk in the olive oil and season with salt and pepper.
  4. In a large mixing bowl, place the peppers, red onion, olives, parsley, cucumber, tomatoes, chickpeas, and chicken. Toss with the vinaigrette and season as needed.
  5. Spoon ½-¾ cup of the chicken and vegetable salad on top of each leaf of lettuce. Sprinkle the feta on top and serve.
